Easter Brunch Ideas...

This year we will be having an Easter Brunch instead of dinner as church is later in the day and the family that we will have here are flying out that evening. I've been trying to find a few tasty and new recipes to make it special. Let me know what you think...

Maple-Bacon Oven Pancakes
(I think I've mentioned our LOVE of pancakes before, and oven baked ones are like heaven!)

Maple-Bacon Oven Pancake

Makes: 12 servings
Prep: 15 minutesBake: 10 minutes

Ingredients

  • 1-1/2  cups  packaged biscuit mix
  • 1  cup  shredded cheddar cheese (4 ounces)
  • 2    eggs
  • 3/4  cup  milk
  • 1/4  cup  maple-flavored syrup
  • 5  slices  bacon, crisp-cooked, drained, and crumbled
  •     Maple-flavored syrup (optional)

Directions

1. Preheat oven to 425 degree F. Grease and flour a 13x9x2-inch baking pan; set aside. In a medium bowl combine biscuit mix, half of the cheddar cheese, the eggs, milk, and the 1/4 cup syrup; beat until nearly smooth. Spread in prepared baking pan.
2. Bake in preheated oven for 10 to 12 minutes or until toothpick inserted near center comes out clean. Sprinkle with remaining cheddar cheese and the bacon; bake for 3 minutes more. Cut into squares. If desired, serve with additional syrup.

Sweet Cheese Blintzes

Sweet Cheese Blintzes
Prep: 35 min.Cook: 10 min.

Ingredients

  • 1  8-ounce carton  mascarpone or cottage cheese
  • 1  tablespoon  honey
  • 1  tablespoon  milk
  • 1/2  teaspoon  finely shredded lemon peel or snipped lemon verbena
  • 1/4  teaspoon  anise seed, crushed
  • 3/4  cup  all-purpose flour
  • 1/2  teaspoon  baking powder
  • 1    egg white
  • 3/4  cup  milk
  • 1    egg yolk
  • 2  teaspoons  walnut oil or hazelnut oil
  • 1-1/2  teaspoons  granulated sugar
  • 1/2  teaspoon  vanilla
  •     Nonstick cooking spray
  • 1  cup  seedless green grapes, sliced
  •     Powdered sugar

Directions

1. For filling, in a small mixing bowl beat together mascarpone cheese, honey, the 1 tablespoon milk, shredded lemon peel or verbena, and anise seed. Cover; set aside.
2. For blintzes, stir together flour and baking powder. Set aside. In a small mixing bowl beat egg white with an electric mixer on medium to high speed until soft peaks form.
3. In a large mixing bowl combine the 3/4 cup milk, egg yolk, walnut or hazelnut oil, granulated sugar, and vanilla. Beat with electric mixer until well combined. Add flour mixture; beat just until mixture is smooth. Fold in beaten egg white (texture should be that of a milk shake).
4. Spray a nonstick griddle or skillet with nonstick cooking spray. Heat over medium heat 1 to 2 minutes. For each blintz, pour about 2 tablespoons batter onto griddle. Quickly spread batter to 4- to 5-inch circle.
5. Cook blintz pancake for 20 seconds or until light brown. Gently turn with a spatula; cook second side for 15 seconds. Invert blintz pancake onto a plate lined with paper towels. Repeat with remaining batter to make 10 to 12 blintzes. (You may cook up to 3 or 4 blintzes at a time in a large skillet.) Place a dry paper towel between each layer of blintz pancakes. Cover and keep warm.
6. To serve, spoon 1 slightly rounded tablespoon of cheese mixture across pancake just below center. Fold the bottom of pancake over filling. Fold in sides, then roll up. Arrange blintzes, seam-side down, on individual dessert plates. Top with grapes. Sprinkle with powdered sugar. Serve warm or at room temperature. Makes 10 to 12 servings.

Love Note Pancakes &

Monday Munchies...
HAPPY VALENTINE'S DAY!
HERE'S A BIG HUG FOR EACH OF YOU...

The hubster is out of town for Valentine's Days...{insert sad face here}
so it's up to the girls and I to celebrate.
While they would be content with a box of chocolates for dinner, my mommy guilt might kick in on that one! I think I've mentioned before that we are totally breakfast-for-dinner eaters, so our not so romantic Valentine dinner is gonna be these...

Aren't these just FUN!! You can get all the how-to's over at
Random Thoughts of a Supermom!

And for dessert....
that afore mentioned box of chocolates and homemade marshmallows!
This recipe was published at Christmas and used candy canes to give the mallows a super yummy, minty flavor! SO GOOD!!! We loved them. Thought they'd be fun in a sweeter flavor for V-day.
I tested out strawberry and cherry-strawberry was the winner at our house. I just swapped out the crushed candy canes for crushed hard candies.
You'll find this delicious little treat at
Little Birdie Secrets.

To those of you that were super awesome and linked up to Friday's T.G.I.F. Party-
THANK YOU!!!
We did it! 25+ links, I'm a happy girl.
{The button not working was my fault-didn't copy all of the code! OOPS!}
Stay tuned till tomorrow to find out your prize...

Baked French Toast and Banana Crumb Muffins

Monday Munchies...

I will be the first to admit that my eating habits are really lousy.
I never eat "meals" until it's time for dinner, I kind of forget to eat,
and breakfast?
I don't think I've had breakfast in the a.m. hours since elementary school ...unless, does a Coke Zero count?
{I do however, make sure my girls start off the day on a good note!}
But breakfast in the p.m....YES PLEASE!
It has to be one of my favorite ways to end a day.
Here is one of our favorite breakfast for dinner meals...

Baked French Toast Recipe
Recipe and photo via Country Door Recipes
Baked French Toast

1 loaf of French bread
3 eggs
1 cup of half and half
1 cup of milk
1 Tbsp. vanilla extract
1 tsp. nutmeg
1 tsp. cinnamon

Cut the French bread in to 1 1/2" slices and place in a baking dish, sprayed with a nonstick spray. Mix all of the above ingredients in a large bowl (until fluffy) and pour over bread evenly. Cover with plastic wrap and refrigerate overnight.
{I make it in the morning after the girls are gone to school and then keep it in the fridge all day}

For topping:
1/2 cup brown sugar
1 Tbsp. corn syrup
1/2 cup chopped walnuts
1/2 stick (1/4 cup) of melted butter

Mix all the ingredients well, and refrigerate as well.

The following morning, thaw out the topping or place in the microwave for 30 seconds to soften. Spread over each piece of French bread, preheat oven to 350° F and bake for 40 minutes. Serve hot with pure maple syrup.

No time to cook in the morning?
Bake these up the afternoon before and you're ready for the day...
Banana Crumb Muffins
This recipe was linked up to my first T.G.I.F. party, and I couldn't wait to try it. Muffins are a BIG deal at my house, {we call them breakfast cupcakes} and these didn't disappoint!

You can find the recipe and directions at It's All In My Head!
Thanks Stef!
Happy Eating...
